Produce Safety University, otherwise known as PSU, is a one-week training course for school nutrition professionals. PSU focuses on how to identify and manage food safety risks of fresh produce.
The curriculum includes the entire fresh produce supply chain, including growing, harvesting, storage, and preparation. PSU is for local school nutrition program operators and State agency staff in administration, training, and technical assistance. PSU sessions are held every year during the spring and summer.
